The Semillon was harvested in the early morning, then crushed and settled overnight in a stainless-steel tank. The juice was then transferred to seasoned French oak barriques and fermented to dryness, then matured in the barriques for a further 5 months prior to bottling.
This small batch release of Semillon from the Montague Home Estate is the first release of this wine in 20 years – and we couldn’t be more excited! Markedly different from many of its East Coast cousins, the zip and drive of this wine is so very refreshing in its youth. Melon rind and lemon peel swirl around pear washed with honeysuckle, with hints of chamomile and soft beeswax hiding in the shadows. A wonderful seam of acidity and salinity ensures this wine maintains a laser-like focus.
Food Pairing: Cannot go past roasted marron with garlic butter and parsley!
