Two batches of Chardonnay grapes were hand-picked from our Capulet vineyard on the 11th and 15th of February 2021, chilled overnight, and then whole-bunch pressed into a stainless-steel tank. Both batches were cold settled for 72 hours and then racked together for fermentation. The ferment was completed to dryness in 10 days and the finished base wine was transferred to a full tank. The wine was then stored on fine lees for a period of 10 months to promote autolysis. Dosage and yeast were added to tank on 7 November 2021 for secondary fermentation, then transferred to bottle and crown sealed. Tiraged for 18 months then disgorged and topped with liqueur dosage in May 2023.
This new, single-site Blanc de Blanc continues our love affair with elegant and energetic sparkling. A fresh bouquet of spring apple blossom, citrus, and fleshy grapefruit prepares the way for a palate that reveals a deliciously fine and precise bead, crunchy green apple, nashi pear and lemon pith. Subtle hints of honeyed nougat swirling around shards of salty chalk finish this full yet ethereal wine.
