Chardonnay grapes were hand-picked on 23 February 2022, chilled overnight, then whole bunch pressed the following morning directly into a combination of 44% new and 56% second fill French oak barriques. Indigenous yeast completed the ferment to dryness. The wine was then matured in oak for 9 months, prior to filtering and bottling on 25 November 2022.
A gracious maritime chardonnay, wreathed in ocean air and a saline mist. A suggestion of wild honey oversees notes of citrus blossom, grapefruit pith, white nectarine, and just a hint of jaffa shell. This Chardonnay is bright and elegant, textural and layered, with gentle river stone minerality tethered to a precise acid backbone. Soft brûlée and crème caramel underpin right through to the finish.
