Chardonnay grapes were hand-picked on the 22nd of February 2023, chilled overnight, and then whole bunch pressed the following morning directly into a combination of 40% new and 60% second fill French oak barriques. Indigenous yeast completed the ferment to dryness. The wine was then matured in oak for a further period 9 months, prior to filtering and bottling on 10 November 2023.
An elegant maritime chardonnay, wreathed in sea mist and citrus blossom. The palate sees white nectarine, grapefruit pith and lemon curd all underpinned by wet river stone, and just a lick of wood spice. A graceful, pristine acid structure delivers a richness and a tension throughout the length of this wine. Truly an exercise in balancing power with restraint.
